ONE BOWL BANANA BREAD
4 ripe bananas, smashed
1/3 cup melted salted butter
3/4 cup light brown sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground cloves
1 1/2 cups flour
Preheat the oven to 175°C.
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
Mix in the sugar, egg, and vanilla, then the spices.
Add the baking soda and salt over the mixture and mix. Add the flour and mix. Be sure not to over-mix. Pour mixture into a buttered and lined 4×8 inch loaf pan.
Sprinkle with brown sugar, this adds a great crunch to the loaf. I always like to lay a slice of banana or sliced bananas on top for decoration.
Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve with some salty farm butter!
No need for a mixer for this recipe — need I say more? As much as I love my trusty stand mixer, it is so great to be able to bake something in just one bowl! It saves time and dirty dishes. Be sure to sprinkle with sugar before it goes into the oven as this gives necessary texture. I am pretty sure this batter would make delicious muffins too. Happy Baking.
